when i freeze bottled spring water, there’s little white things floating it when it thaws. what are they?

When water freezes is forces out anything that is dissolved in it, which why as a popsicle melts it turns white at the top. In the case of your spring water it is the naturally occurring minerals that are normal, healthy and make it taste good.
